My favourite winter warmer - Mrs B's Chilli Con Coco

  1. Mrs B’s Chilli con Cocoa
    A rich and sumptuous winter warmer
    Serve with brown or mixed rice.
    Ingredients:
    • tbsp olive oil
    • 2 chopped onion 1 red, 1 white
    • 4 cloves garlic
    • 1 pack streaky bacon
    • 2 lbs minced beef
    • 2 tablespoons Cocoa Powder
    • 2 tablespoons chilli powder or chilli flakes
    • 2 teaspoons ground cayenne pepper
    • 1 teaspoon salt
    • lots of black pepper
    • 1/2 teaspoon ground allspice
    • 1/2 teaspoon ground cinnamon
    • 1 can chopped tomatoes
    • 1 tbsp tomato puree
    • 1 tbsp worcestershire sauce
    • 1 tbsp dark moscovado sugar
    • 1 can dark red kidney beans
    • ½ bottle red wine
    Directions:

    Heat oil over medium heat in large saucepan; add onion, garlic and bacon. Cook, stirring frequently, 3 minutes or until tender. Add meat, cook until brown.

    Stir in all other ingredients, heat to boiling. Reduce heat, simmer minimum 30 minutes or ideally longer.
    Season to taste

  5. OH - I made a killer fish pie the first time I had mum and dad over to the flat - it was one of Jamie Olivers...let me try and dig it out!

    I make a quick and easy Butternut Squash soup.
    1 Butternut Squash
    2 carrots
    1 tspn cumin
    Vegetable Stock (around 450 ml) more if a large squash used

    Chop up the Squash and carrots, add veg stock and cumin, bring to the boil and simmer for around 20 mins or until Squash is soft. I usually liquidise at the point but you can eat it as a chunky soup.
