Mrs B’s Chilli con Cocoa A rich and sumptuous winter warmer Serve with brown or mixed rice. Ingredients: • tbsp olive oil • 2 chopped onion 1 red, 1 white • 4 cloves garlic • 1 pack streaky bacon • 2 lbs minced beef • 2 tablespoons Cocoa Powder • 2 tablespoons chilli powder or chilli flakes • 2 teaspoons ground cayenne pepper • 1 teaspoon salt • lots of black pepper • 1/2 teaspoon ground allspice • 1/2 teaspoon ground cinnamon • 1 can chopped tomatoes • 1 tbsp tomato puree • 1 tbsp worcestershire sauce • 1 tbsp dark moscovado sugar • 1 can dark red kidney beans • ½ bottle red wine Directions:
Heat oil over medium heat in large saucepan; add onion, garlic and bacon. Cook, stirring frequently, 3 minutes or until tender. Add meat, cook until brown.
Stir in all other ingredients, heat to boiling. Reduce heat, simmer minimum 30 minutes or ideally longer. Season to taste
I make a quick and easy Butternut Squash soup. 1 Butternut Squash 2 carrots 1 tspn cumin Vegetable Stock (around 450 ml) more if a large squash used
Chop up the Squash and carrots, add veg stock and cumin, bring to the boil and simmer for around 20 mins or until Squash is soft. I usually liquidise at the point but you can eat it as a chunky soup.
